Year 10 Food Science and Technology

Course Description

Teacher in Charge: J. Crawford.

This course will follow the New Zealand Curriculum for Technology and the main focus will be on processed outcomes. Most students work at Level 5 of the National Curriculum for Technology in the areas of Technological practice and Technological knowledge. The course will include three independent units of work, one of which will give the opportunity to gain Level 1 NCEA credits.

Unit 1- Food safety and food hygiene: A study of the micro-organisms that cause food poisoning and the procedures used to prevent food poisoning from occurring.

Unit 2 - Get wise 2 health: Health and well being is the focus of this unit of work helping students to understand how to make wise choices when it come to food and designing new food products.

Unit 3 – Technological Knowledge, Materials: cereal products - Ever wondered why cakes sometimes sink in the middle or become like volcanoes? Ever wanted to make your own pastry or bread? In this unit you will learn how to make a range of cakes, pastries, and biscuits and understand why things sometimes go wrong. 

Unit 4- Technological Practice, Manufacturing: Do you like being creative and thinking outside the box? Do you enjoy a party? How about becoming a party planner? This is an opportunity for you to create a themed party for a child and have fun in the process creating colour changing food products by exploring the magic of food science. 



Course Overview

Term 1
Unit 1 Food Safety and Hygiene, (4 weeks) This will cover the basics of the preparation and cooking of food safely.

Unit 2 Get wise 2 health - (6 weeks) This programme is designed to help students make wise choices when it come to food, health and wellbeing. It will cover hauora, lifestyle in Aotearoa, nutrition and physical activity.

Term 2
Unit 3 Cereal Products continued, (10 weeks) This unit of work will look at all cereal based products including bread, cakes, biscuits, pastry and pasta. There will be a design element to this unit and students will choose a cereal based product to work with and create a product of their own choosing.

Term 3
Unit 3 Party planner start, (10 weeks) This unit will give students the opportunity to become creative and plan a themed party for a child. In teams they will plan all of the food for the party, based on a theme they have chosen. The challenge is that the food should look like something that is is not.

Term 4
Unit 4 - Trialling and testing various techniques in food technology.

Pathway

This course would lead on to Level 1 Food Technology which is an academic course aimed at preparing students for a career in food technology, food manufacturing, food science, sensory science, nutrition, product development and many more interesting opportunities.
